Turkish Orange Lentil Soup
As the weather gets cooler we tend to gravitate towards warmer, heavier foods.
Soups are a wonderful way of getting warm and keeping our tummy nice and full on those grey, rainy days.
Lentil soup is one of the healthier choices we can make and this is because lentils may be small but they are nutritional giants. They are packed with vitamins, minerals, protein and fiber. They are cheap, low fat, easy to prepare and in my point of view need to become compulsory in all our diets.

Place the onion, lentils, carrots and parsley in the pot. Cover with filtered water about 3-4 cm above the ingredients. Bring to the boil, while stirring (make sure to stir in the white foam that forms from cooking the lentils). Cook on low heat for another 15-20 min until the lentils are very soft. Blend till smooth with a hand blender or transfer to a regular blender. Add salt and pepper to taste.
To serve: place soup in bowls, add a dollop of yogurt, 2 teaspoons of lime or lemon juice and a dash of sumac.
