The difference between Cacao and Cocoa & a Almond chocolate bliss ball recipe
Cacao refers to the plant, a small evergreen tree, which is cultivated for its seeds, also known as cacao beans or cocoa beans.
The term “chocolate” refers to the a sweet food made from a preparation of cacao seeds (typically roasted). If the cacao seeds are not roasted, then you have “raw chocolate,” which is also typically sweetened.
Raw cacao is a mineral-dense super food. It’s packed with lots of minerals including zinc, iron, calcium, magnesium and manganese, and it’s also one of the highest antioxidant foods available. Raw cacao is made by cold-pressing unroasted cocoa beans, leaving the nutrients and living enzymes in tact, while cocoa powder is made by roasting raw cacao at high temperatures.
This roasting process changes the molecular structure of the cocoa bean, reducing the enzyme content and damaging some of the delicate nutrients. Knowing the meaning of these terms is important, because if you think you’re improving your health by eating typical chocolate candies, you’re being misled.
In summery: Always choose Cacao over Cocoa and always RAW over Roasted.

Almond Chocolate Bliss Ball Recipe
Mix all the ingredients together in a bowl, roll small balls using wet hands, roll the small balls in dessicated non sweetened coconut, raw cacao powder or chia seeds and freeze.
